      Among the vegetable oils olive oil is the only oil which can be obtained by treating olive via mechanical ways and produced naturally with physical methods. Both not requiring much hand labor during the production of source material and not requiring special technology comparing to other seed oils in producing stage and natural consumption depending on its superior characteristic in terms of nutrition, and because it is a fruit juice, it always finds higher economical value comparing to the other vegetable oils.

      Benefits of olive oil are countless… Olive oil regulates the amount of cholesterol in the blood, reduces heart attacks and the risks of some cancer types. It renew cells and slows the aging process with the help of A, D, E, K vitamins in it. It regulates nervous and digestive systems. Accelerates brain development and bones strengthening. Because of its many positive effects proved scientifically in terms of health; it is widely used in the countries like Japan which has no olive trees but have the healthy eating culture, an increasing interest is also observed to olive and its derivations.

      While olive oil can be consumed directly as food, it is also used commercially in pharmacies, shampoos because of its nourishing, protecting and softening properties on skins, in hand and body lotions and soap productions. Production waste pulp of olive oil is called as prina and it contains 6-12% oil. This oil taken by chemical methods is called as “prina oil”. This oil, however, is used in industry for soap and paint manufacturing.  While a fuel equal to lignite coal can be obtained by drying oil free prina up to 20% moisture level, after removing fertilizer and seed parts, it is also used as animal feed additives.

      Rare observation of cardiovascular diseases in Mediterranean people shows the diet of Mediterranean people and it is called as “Mediterranean diet”. In Traditional Mediterranean diet, oil and olive oil are important nutrients which should be consumed every day.
       
      1. NATURAL OLIVE OIL

      A-Extra Virgin Olive Oil

      Extra virgin olive oil comes first pressing and produced without refining.İn a technical sense extra virgin olive oil may have acidity level up to %0,8 its a best olive oil on the world ,good  smells and taste.

      B-Virgin Olive Oil
      Virgin olive oil also comes from the first pressing, and is also produced without refining. In a technical sense, virgin olive oil may have an acidity level of up to %2. Its flavour intensity can vary and its taste is less mild than extra virgin olive oil.

      2-RAFINED OLIVE OILS
      That Oil  must be refined because  Acid with a high percentage of olive oil is not edible quality. Refined olive oil which obtained after refining process has a ratio of approximately zero acid and not more than acidity % 0,3  it is free of disturbing the quality of the oil. Refined olive oil is consumed in countries that are not accustomed to consume more natural olive oil.

      3-PURE OLIVE OIL

      Pure Olive Oil which have own unique taste and smell produced with mixed extra virgin olive oil and refined olive oil to take the taste away of olive oil’s strong
      smell and taste. Riviera olive oil is used in all of cold foods
      and hot meal. Acid ratio is maximum % 1.

    Olive is a frequent branched evergreen tree which can grow in the regions where Mediterranean climate prevails and gives fruits and has the length between 3-12 m averages. Since the growth of the olive tree is limited with a certain climate, this is the most important factor for olives to spread all around the world. For this reason, almost all olive trees in the world are located in Mediterranean countries. Olive trees grow slowly and give products late. In addition that they start to give fruits 4-8 years after they planted, the highest efficiency is reached after 15-20 years.  They can live a very long time. Olive trees generally have lives for 300-400 years. There also some live more than a thousand years. When the tree dies, another tree sprouts from the root which makes the plant immortal.

    Olive which is accepted to be the first tree beneficial to human and originated from Anatolia is a native plant of Mediterranean. It is accepted that there are 800 million of them in the world. 80% of these trees are located in the countries in the Mediterranean basin. While Turkey is supplying 8% of the whole world’s olive production, it is located in the top five countries, Spain, Italy, Greece, Greece and Tunisia for world’s olive production.

    Our country’s olive industry is the living source and an addition for the income of 400 thousand families and almost 2 million people with 800 thousand hectares of olive lands, 85 million of fruiting olive tree with an average production of 1.1 million tons. Olive industry which is one of the most important branches of Turkey’s agriculture and agro-based industries has economic and social affect which cannot be ignored in terms of internal needs and external market opportunities in addition to the employment opportunities.

    By many scientific sources, homeland of olive trees a typical Mediterranean plants with a history rooted to prehistoric ages are Mardin, Kahramanmaras and Hatay triangle of Anatolia. Olive producing first started in Anatolia and spread to the other Mediterranean countries from there. Spanish are the one who introduced olive to American continent. Olive is first taken to Mexico and planted by missionaries in 16. and 17. centuries, by time it spreaded to California and to South America.

    Olive, staying popular throughout history among the people due to the economic value and the multi-purpose usage ability in everyday life, played a holistic role in many cultures and provided very important contributions to the development of Mediterranean economy.
    Especially in the strengthening of the Roman Empire which spread the olive productions and developed oil production techniques, effects of olive oil trade were huge. Many examples such as Goddess Athena’s creation of olive tree in Greek mythology in order to continue her life, accepting them as holy trees in ancient Greece and permitting only good and honest people to farm olives and punishing those who damage olive trees by death, crowning Olympics champions with olive leaves, burning olive oil in holy lamps in religious ceremonies and using them to bless kings and new born babies etc. proves the great importance and value given to olives in the historical process. Olive has a special place in the cultural wealth of Anatolia.
